INGREDIENTI
320 g of plain flour
225 g of brown sugar
200 g of butter at room temperature
200 g of chocolate, both white and dark, cut into small pieces
150 g of dark chocolate (or milk chocolate, as an alternative)
50 g of honey
the seeds of ½ vanilla bean
2 eggs
1 level teaspoon of baking soda
1 teaspoon of baking powder
a pinch of salt
COME PROCEDERE
Melt the dark chocolate and the honey in the microwave oven (or cook them in a double saucepan over a low heat). Stir with a spatula until well combined. Set aside to cool for a few minutes.
In a bowl - or in the standing electric mixer - beat the butter and the sugar with an electric hand mixer until the mixture is light and fluffy.
Add the chocolate and honey mixture, the salt, the vanilla seeds and an egg at a time, mixing well after each addition
Gradually add the flour, the baking soda and the baking powder sifted and stir well with a spatula until the dough is smooth and homogeneous.
Add also half of the white and dark chocolate cut into small pieces setting aside the remainder.
Chill the dough in the fridge for at least an hour.
Preheat the oven to 180°C.
Take the dough out of the fridge and, with the help of a spoon (or a small ice-cream scoop), form some little balls.
Arrange them at intervals in a baking tray lined with baking paper.
Bake the cookies for about 10 minutes. Take them out of the oven and add some white and dark piece of chocolate. Bake again for 2-3 minutes.
Allow the cookies to cool completely before transfer to a serving dish.
