INGREDIENTI
For the dough
530 g of plain flour
80 ml of milk
60 ml of water
60 g of melted butter
55 g of granulated sugar
2 eggs at room temperature
6 g of dehydrated baker’s yeast
a pinch of salt
the tip of a teaspoon of vanilla seeds
For the filling
200 g of granulated sugar
60 g of butter at room temperature
ground cinnamon
ground nutmeg
COME PROCEDERE
In a large bowl, combine the flour, the sugar and the yeast. Stir well and add the salt.
In another bowl, combine the melted butter, the milk, the water and the vanilla seeds.
Beat the eggs and add them to the dry ingredients, stirring well to combine.
Pour the dry ingredients into the bowl with the liquid ones and knead until you have a smooth and homogeneous ball of dough.
Cover the dough with cling film and let it rise in a warm place for at least 2 hours or until its volume has doubled.
Take back the dough on a lightly floured pastry board and, with the help of a rolling pin, roll it out into a rectangle of the thickness of approximately 5 mm.
In a bowl, mix the cinnamon, the nutmeg and the sugar.
Brush the dough with the butter and then sprinkle with the spiced sugar.
Preheat the oven to 200°C.
Use a pizza cutter to cut some rectangles out of the dough.
Line a loaf tin with baking paper and transfer the rectangles to it, vertically.
Fold slightly the edges of some rectangles to obtain the irregularity of the slices.
Let the dough rise again for about 30 minutes in a warm place.
Reduce the temperature of the oven at 180°C and bake the cinnamon sugar pull-apart bread for about 30/35 minutes. When partially cooked, if it browns too quickly, cover with an aluminium foil.
