INGREDIENTI
½ pumpkin (I used a Neapolitan Long Pumpkin but you can use other kinds of tasty pumpkin instead)
2 red onions
red garlic
pine nuts
fresh thyme
fresh rosemary
salt
pepper
extra virgin olive oil
COME PROCEDERE
Preheat the oven to 200°C.
Wash and dry the Neapolitan Long Pumpkin. Using a sharp knife, cut it into wedges (about 1 cm thick) and remove the seeds.
Use some different star-shaped cookie cutters to cut some little stars out of the pulp.
Cover a baking sheet with baking paper lightly greased and place the pumpkin stars on it.
Peel the onions and slice each of them into 6 wedges.
Place them on the baking sheet with the pumpkin.
Add some unpeeled cloves of garlic pressed, the aromatic herbs and the pine nuts.
Add a generous pinch of salt and pepper to taste and drizzle with oil.
Bake for about 12/15 minutes or until the vegetables are as tender and golden brown as you like them.
Serve hot.
NOTE
You can roast the left-overs of the pumpkin with aromatic herbs or your favourite spices (nutmeg, cinnamon, cloves, cayenne…) according to your taste and enjoy as a side dish or you can make an healthy and easy soup or pureed soup.
