NAKED CHOCOLATE CAKE WITH TRUFFLES AND CINNAMON STARS COOKIES

The best recipe for a moist and delicious naked chocolate cake with truffles and cinnamon stars cookies, an extraordinary cake, a must-have for all chocoholics. This cake is just the thing to celebrate new year's day in style. A simple cake to make with little effort, it can be made up to one day ahead!
Grease and flour the sides of three spring-release tins (Ø 16 cm). Line their bottom with baking paper, wet and squeezed.
Using a food processor, combine all the ingredients and knead until you have a smooth and thick mixture.
Divide the cake mixture evenly into the three baking tins.
Bake the cakes for about 35-40 minutes or until a wooden toothpick inserted into the centre of each cake comes out clean.
Allow the cakes to cool in the tins for ten or so minutes before unmolding.
Turn them upside down on wire racks until they are completely cool.
Make the hazelnut spread frosting
In a large bowl, combine the mascarpone and the hazelnut spread, stirring well with a wooden spoon (don’t use the electric whisk!) until you have a smooth and homogeneous cream without lumps.
Chill in the fridge until it’s time to decorate the cake.
Divide the hazelnut spread frosting evenly into three parts.
With a sharp knife, cut the domes off the top of the cakes so that they have flat tops.
Place the first cake layer on a serving dish and spread a part of frosting directly on its top.
Place the second cake directly on top of the first layer, slightly pressing to make it fit perfectly. Spread another part of frosting on it.
Finally, place the last cake on top of the second layer, slightly pressing to make it fit perfectly again.
Spread a thin layer of the last part of frosting on the top of the cake and then use a spatula to lightly frost and level the entire cake, leaving the layers largely “naked”. It’s essential not to coat completely the entire cake.
Keep the layer cake in the fridge to allow the frosting to set.
About 30 minutes before serving the cake, decorate it with truffles and cinnamon cookies, as desired. Enjoy!!
