Jam filled butter cookies - Halloween pumpkin cookies filled with orange marmalade - Halloween cookies | These jam filled butter cookies are easy to customize with your favorite jam and are a really tasty treat.

INGREDIENTI
  • 250 g of plain flour
  • 125 g of butter, cold
  • 125 g of caster sugar
  • 1 large egg
  • zest from half an orange
  • orange marmalade (or your favourite jam)
  • icing sugar
COME PROCEDERE
  1. In a large bowl, mix the flour, the sugar and the salt.
  2. Cut the butter in cubes and add it to the dried ingredients.
  3. Using your hands, knead gently until you have a sand-like dough.
  4. Add the egg and the orange zest. Knead quickly until combined.
  5. Give a round shape to the dough, cover it with cling film and chill in the fridge for at least 1 hour.
  6. Preheat the oven to 180°C.
  7. Take the dough out of the fridge and, with the help of a rolling pin, roll it out to the thickness of approximately 3-4 mm.
  8. Use a round cookie cutter to cut small disks out of the dough.
  9. Use a pumpkin cookie cutter to cut out the centre of half of the cookies.
  10. Cover a baking sheet with parchment paper and transfer the cookies to it.
  11. Bake for about 15 minutes.
  12. Allow the cookies to cool completely before filling them.
  13. Spread some orange marmalade on the small disks and then cover with the remaining pumpkin cookies, pressing slightly.
  14. Sprinkle with abundant icing sugar and… enjoy Halloween :)
