SAVOURY PIES WITH PESTO SAUCE AND VANILLA-FLAVOURED CHERRY TOMATOES

The savoury pies with pesto sauce and vanilla-flavoured cherry tomatoes are simple, versatile and quick to make. They are perfect to be served as appetizer, brunch and buffet but also for a family dinner. Try my recipe and enjoy!

INGREDIENTI
125 g of wholemeal flour
125 g of plain flour
125 g of cold butter
a pinch of salt
cold water, as needed
8-10 cherry tomatoes
fresh pesto sauce
garlic (discretionary)
extra virgin olive oil
a vanilla bean
COME PROCEDERE
Place the flours, the salt and the butter cut into cubes in the bowl of the food processor and pulse at intervals until you have a crumbled dough.
Add the water, approximately 2 tablespoons, and continue to pulse until the dough is smooth and homogeneous.
Using a rolling pin, roll out the pastry thin and even between two sheets of baking paper (about ½ cm thick).
Use a cookie cutter to cut 6 disks out of the dough. Remember that the disks have to be a little bigger than the moulds.
Preheat the oven to 200°C.
Wash and cut the tomatoes into thin rounds. Let them drain between two sheets of kitchen towel.
Transfer the pastry to the moulds and remove the excess.
Spread a teaspoon of pesto over each pie, add the tomatoes, an unpeeled clove of garlic (discretionary), a trickle of oil and a little part of the vanilla bean, better still if you scatter here and there some vanilla seeds.
Bake for about 20/25 minutes or until the pies are golden brown.
Take the pies out of the oven and serve warm or lukewarm maybe with a crunchy mixed salad.
