INGREDIENTI
  • For the dough
  • 370 g all-purpose flour
  • 130 icing sugar
  • 190 g cold butter, diced
  • 1 egg yolk
  • 1 tablespoon cold milk
  • ½ teaspoon fine salt
  • For the filling
  • 2 cups apple mousse
  • 100 g ground almonds
  • 30 g raisins
  • ½ teaspoon ground cinnamon
  • 1 egg, lightly beaten
COME PROCEDERE
  1. In a bowl, whisk together the flour, icing sugar and salt. Using your fingers, work the butter, egg yolk and milk into the dry ingredients.
  2. Form the dough into a ball, wrap in plastic wrap and refrigerate until thoroughly chilled, at least 1 hour.
  3. Make the filling.
  4. In a bowl, whisk together the apple mousse, almonds, raisins and cinnamon.
  5. Preheat the oven to 190°C.
  6. Cut the dough in half. On a lightly floured surface roll half of dough into a one big disc or 3-4 small ones if you want to bake mini pies. Line the bottom and edge of a prepared pie pans.
  7. Spoon the apple filling into pans.
  8. Roll out the remaining pastry and cut the one big or 3-4 small circles. Carefully place the pastry over the apples pressing the edges together.
  9. Brush the surface of the dough with beaten egg.
  10. Bake about 40 minutes.
