OLIVE OIL & ORANGE CAKE WITH FIGS, MASCARPONE AND HONEY

INGREDIENTI
1 cup caster sugar
4 large eggs
1 cup plain flour
½ tsp baking powder
¼ tsp salt
½ cup extra virgin olive oil
3 tbsp orange juice
Zest 1 orange
2 cups mascarpone
2 tablespoons orange blossom
3 tbsp honey (or more according to your taste)
2 tbsp chopped pistachios
8 ripe figs, quartered
COME PROCEDERE
Preheat the oven to 180C/350F and grease and line a 9 inch spring form baking tin.
Beat the eggs and caster sugar until the mixture is light and fluffy for approx. 5 minutes. The mixture should double in size. Fold in the olive oil and orange juice. Then sift the flour, baking powder and salt into the egg mixture, then add the orange zest and mix well until combined.
Pour the cake mixture into the cake tin and bake for 30 mins or until an inserted skewer in the middle of the cake comes out clean. Allow the cake to cool in the tin for 10 minutes before removing and cooling completely on a wire rack.
For the mascarpone topping, combine the honey with the mascarpone using a wooden spoon until softened. Adjust the honey according to your taste.
Once the cake has cooled, spread the mascarpone on the cake then top with the figs, sprinkle with pistachios and drizzle with honey.
