Bran bread (recipe also in English on OPSD blog) this whole wheat bran bread, is good for your health, this recipe can help you introduce more whole grains and fiber to your meal! A lovely change from ordinary sandwich bread, bake a loaf of healthy artisan bran bread with no knead technique. Perfect for breakfast or for healthy sandwiches!

INGREDIENTI
  • 500 g of flour
  • 400/420 ml of lukewarm water
  • 90 g of wheat bran
  • 60 g of middlings
  • 40 g of sourdough starter
  • 3,5 g of dehydrated baker’s yeast
  • 10 g of salt

COME PROCEDERE
  1. In a large bowl, or in the standing electric mixer fitted with the dough hook, sift the flour, the sourdough starter, the dehydrated baker’s yeast, the wheat bran, the middlings and the lukewarm water. Mix well until combined.
  2. Add the salt and knead for some minutes until you have a smooth and homogeneous dough.
  3. If necessary, add to the dough other water little by little but don’t exceed the recommended doses.
  4. Transfer the dough to a flour-dusted bowl. Cover with cling film and a damp rag and let it rise inside the oven (turned off but with the light on) for at least 2 hours.
  5. Divide the dough into 3 pieces of the same weight and knead each of them for some minutes on a pastry board previously covered with flour.
  6. Place them into a loaf tin lined with baking paper. Cover again with cling film and a damp rag and let them rise inside the oven (turned off but with the light on) for 15/20 min.
  7. Preheat the oven to 200°C and bake for ten or so minutes.
  8. Lower the temperature to 180°C and bake again for about 20/25 min or until it is golden brown.
  9. Take the loaf out of the oven and allow it to cool on a wire rack before unmolding.
  10. Once your bran loaf is completely cool, you can slice it.
