Discard the ends of the zucchini and wash them. Using a mandolina or a potato peeler, cut them into thin slices.
Heat a cast-iron grill pan, sprinkle with table salt and then lay the slices on it. Grill on both side and allow them to cool.
Set aside.
Dice the primosale cheese and dress it with the grated lemon zest, the oil and some dehydrated oregano.
Dice also the mango. Set aside.
Place a dice of primosale on each slice of zucchini. Alternate on the skewers a cherry tomato, a basil leaf, a dice of mango, a basil leaf, a slice of zucchini with primosale and another basil leaf. Repeat again.
Keep in the fridge until it’s time to serve your kebabs.
