INGREDIENTI
For the base
300 g of whole wheat flour
100 g of spelt flour
350 ml of lukewarm water
2 g of dehydrated baker’s yeast
2 tablespoons of extra virgin olive oil
1 teaspoon of honey
5 g of salt
For the garnish
400 g of finely chopped tomatoes (or, as an alternative, tomato puree)
some cloves of garlic
salt
dehydrated oregano
COME PROCEDERE
In a large bowl, sift together the flours, the baker’s yeast, the oil, the honey and the salt. Gradually add the water and, using a fork, stir well to combine.
Transfer the dough to a flour-dusted pastry board and knead for some minutes until it is smooth and homogeneous.
Place the dough in a greased bowl. Cover with a damp rag, or cling film, and let it rise at room temperature for at least 2 hours.
Take back the dough, knead it for some minutes on the flour-dusted pastry board and roll it into a rough circle.
Preheat the oven to 230°C.
Cover a baking sheet with baking paper and then transfer the pizza dough to it.
Garnish with the finely chopped tomatoes (or the tomato puree), a pinch of salt, a dash of oregano and the unpeeled cloves of garlic, crushed (if you prefer, you can peel the garlic and cut it into thin slices).
Bake for about 12/15 minutes.
Before serving, drizzle with oil and remove the unpeeled garlic.
