Phyllo pastry rolls with chocolate and pears are a delicious dessert that melts in the mouth. Few ingredients for a dessert rich in flavour, crisp on the outside, soft on the inside. Try my recipe. It’s easy and quick to make!

INGREDIENTI
1 roll of phyllo pastry (or, as an alternative, puff pastry)
pears
dark chocolate
ground cinnamon
extra virgin olive oil
icing sugar
COME PROCEDERE
Preheat the oven to 200°C.
Line a baking tray with baking paper. Set aside.
Wash and core the pears.
Cut them into small cubes and spice with one teaspoon of cinnamon.
Chop the chocolate roughly and add it to the pears stirring well with a wooden spoon.
Carefully place three sheets of phyllo pastry one on top of the others.
With a sharp knife, cut 12 rectangles (cm 10x15) out of the pastry.
Spoon some chocolate filling over the shorter side of a rectangle inside the borders.
Brush lightly the lateral edges with oil and fold them up over the filling.
Gently roll up the rectangle into a tube.
Repeat the process with the remaining rectangles.
Place the rolls onto the prepared baking tray with the open end down.
Brush lightly their top with a trickle of oil and bake for about 20 minutes or until they are golden brown and crisp.
Allow the rolls to cool slightly and dust them with icing sugar before serving.
NOTE
Phyllo pastry is very delicate to work with as it dries quickly. To prevent drying and cracking is important place a clean and damp kitchen towel over the phyllo sheets that are not in use.
