INGREDIENTI
  • 85 g of castor sugar
  • 70 g of toasted hazelnuts
  • 50 g of almond flour
  • 10 g of unsweetened cocoa powder
  • 2 egg whites
  • 1 chocolate bar
  • icing sugar for dusting
COME PROCEDERE
  1. Make the cookie dough one day in advance.
  2. Whisk the egg whites until stiff and set aside.
  3. Chop the hazelnuts in the mixer with the sugar.
  4. In a bowl, add the almond flour, the cocoa powder and, gradually, the egg whites. Using a spoon, gently stir from top to bottom until you have a light and fluffy dough.
  5. Line two baking sheets with baking paper. Spoon some little amount of dough and arrange them at intervals in the baking sheets.
  6. Sprinkle with abundant icing sugar and let them stand at room temperature - without cover them - overnight.
  7. The following day, chop the chocolate roughly and press it on the cookies.
  8. Preheat the convection oven to 200°C.
  9. Bake the cookies for about 10-12 min or until they are golden brown.
  10. Cool them on the baking sheets for some minutes and then transfer your chocolate cookies to a wire rack to cool completely before serving.
