PERSIMMON SPICE CAKE

INGREDIENTS
280 g of plain flour
250 g of persimmon puree (only blended pulp)
270 g of sugar
210 ml of vegetable oil (corn or sunflower)
3 large eggs
just the tip of a teaspoon of table salt
½ teaspoon of baking soda
1 ½ teaspoon of baking powder
1 teaspoon of ground cinnamon
½ teaspoon of ground nutmeg
¼ teaspoon of ground cloves
icing sugar for dusting
COME PROCEDERE
Preheat the oven to 180°C.
Grease and flour a baking tin. Set aside.
Whirl the persimmon pulp in a blender until smooth.
In a bowl mix the dry ingredients: flour, salt, baking powder, baking soda and spices.
In another bowl mix the persimmon puree with oil and sugar until well combined.
Add an egg at a time, mixing well after each addition.
Gradually add the dry ingredients into the persimmon mixture and mix well.
Spoon the cake mixture into the baking tin and bake for about 50/55 min. or until a wooden toothpick inserted in the middle of the cake comes out clean.
Take the cake out of the oven and cool it in the tin for approximately 10 min. before unmolding on a wire rack to continue cooling.
Sprinkle with abundant icing sugar before serving.
