A simple and easy side dish never looked this good!

INGREDIENTI
  • 8 ripe tomatoes on the vine
  • tofu
  • fresh aromatic herbs (mint, basil, oregano)
  • grated sliced bread
  • grated Parmesan cheese
  • oil
  • salt
  • pepper, discretionary
COME PROCEDERE
  1. Preheat the oven to 200°C.
  2. Wash and dry the tomatoes.
  3. Using a sharp knife, cut the upper parts of the tomatoes and set aside.
  4. Remove the seeds and the pulp without ruin the borders. Sprinkle with salt and put them, turned upside down, into a dish.
  5. Put the seeds, the juice and the pulp of the tomatoes into a bowl. Add a couple of tablespoons of oil, a pinch of salt, the Parmesan cheese, the grated bread, the fresh aromatic herbs, chopped, and, on the basis of your taste, a grind of pepper.
  6. Dice the tofu and put it into the bowl with the other ingredients, mixing well.
  7. Remember to keep aside some Parmesan, some grated bread and some dice of tofu.
  8. Stuff the tomatoes with the mixture and then add the Parmesan, the grated bread and the tofu.
  9. Grease a baking pan with oil and then put the tomatoes in it. Add a drizzle of oil and cover them with their upper parts.
  10. Bake for about 45-50 mins. If the tomatoes were to become too dark, cover them with aluminium foil and cook again.
  11. Take the tomatoes out of the oven and allow them to cool down before serving.
  12. Try these tomatoes the day after. They are even good cold!
